One of regular followers, Teri and her husband came up with this great take on baked "fried" chicken! She used our Miracle Matcha Health Mix-in, which is packed with healthy Omega-3's, antioxidants and fiber! It provides crunch, flavor, and health in your meal without the nasty oil. Try it for dinner, we did and it was delicious!

Serves 4-6

You will need:
* 1-2 baking sheets
* 1-2 wire baking racks
* Two medium bowls


2 pounds of boneless-skinless chicken breasts
2 large eggs
Splash of almond Milk
2 tablespoons of Dijon mustard
1 cup of Miracle Matcha Health Mix-In

1 teaspoon each of salt, ground black pepper, ground cayanne pepper and hungarian paprika


1.) Preheat oven to 350 degrees.
2.) Set wire racks on baking sheets.
3.) In one bowl, whisk together eggs, almond milk, and mustard.
3.) In another bowl, combine Miracle Matcha Health Mix-In with spices. Taste and adjust to preference. 
4.) Dip one chicken breast at time in the egg and milk mixture. Shake off excess. Follow with dipping and coating in the Matcha Mix. Place chicken breast on baking rack.
5.) Once all chicken breasts are coated, bake in the oven for 30 minutes, or until done/cooked to 165 degrees internally. (Insert thermometer into the thickest past of the breast to measure.)
6. Allow to cool slightly and enjoy!

Note: You can gingerly flip the chicken breasts halfway through.

Additions: Serve with a marinara sauce, mustard of choice, or drizzle with agave syrup.
